A Natural/ Dry processed Red Catuai variety with an extended anaerobic cherry fermentation cultivated by the Peralta family and team at Finca Santa Maria de Lourdes in the natural mountain forests of the subregion San Fernando, Nueva Segovia. This area was heavily mined and used as a war zone during the Sandinista uprising for many years. After the UN cleared the area of mines Octavio Peralta began restoring coffee production and preserving nature, reserving 40 hectares of the land for the sole purpose of the conservation. The farm has obtained rainforest alliance recognition for their continued dedication to the improvement of the natural habitat.

The Peralta family put themselves at the forefront of speciality coffee innovation with the families coffee growing history dating to the early 20th century, Octavio and brother Julio shifted their focus to their unique speciality preparations in 2008.

We have found the perfect in-house recipe to compliment the extended anaerobic cherry fermentation producing notes of Red cherry, Praline, Brown sugar and Apple.
