Description
An organically grown, naturally pulped, washed and patio dried bean, cultivated by the APROCASSI coffee association in the Cajamarca region of Peru. This association was formed by local farmers more than 20 years ago to resist the invasion of mining companies into their farmland. The association now focuses on providing speciality coffee and the continuous improvement of their members, prioritising gender equity, encouraging younger generations and training new people.
These beans undergo a process known as the Swiss water method to remove the caffeine content from the beans; a gentle, low temperature, natural and organically-certified process that allows them to retain their natural flavours and complexity. These beans are roasted in-house to produce a coffee with a balanced acidity and smooth chocolate flavours with hints of caramel and nuts.
Similarly to all our coffee here at Duffin’s, it is a Direct and Fair Trade product; we buy it at well above the World Trade and Seasonally Agreed price to ensure that the produces get a guaranteed annual income, regardless of price fluctuations.
